32 ounces’ chicken stalk (you can also use vegetable stalk)
1 tablespoon olive oil
¼ kosher salt
¼ cup grated Pecorino- Romano cheese

- Take stalk in a saucepan and simmer it over medium heat. Take out the pan from stove when it brings to the boil. Keep it warm.
- Place risotto pan on the stove on medium heat. Add oil into the pan. If you want you can add other alliums of your choices like onion, shallots, etc.
- Add rice into the pan and stir it. Add 1 ladle of a stalk and stir it. Wait until all stalk get absorbed through the rice.
- Again add another ladle of a stalk and stir again. Let it cook for 3 minutes till all broth get absorbed.
- Repeat the process for about 15 to 17 minutes till all rice cook evenly.
- Turn off the heat. Add salt, cheese, and leftover stalk into the pan. Season it with ground black pepper. Serve it hot in a bowl.

- Don’t cook vegetables with rice. Cook vegetables separately. You should add cooked vegetables into the rice.
